Overharvesting a single species may damage the ecosystem as a whole, as it's essentially removing a predator / prey from a food chain.
For example, if people were to overfish a certain type of fish that eats Plankton X, Plankton X would not have anyone to keep it in check, making it overproduce, disrupting the environment.
